FOOD // THE EASIEST HIDDEN VEGGIE TOMATO SAUCE

I’m always looking to get as many veggies into Rosie as possible, and sometimes that means hiding them in sauce! I make big batches of this recipe and then freeze portions to pull out of the freezer as an easy, healthy dinner to just throw onto some pasta when time is short!

Ingredients

1 bag of mixed frozen veggies (they have a minestrone one here in Italy that I use with 8 different types of veggies in)

2 cans chopped tomatoes

1 vegetable stock pot

2-3 cups water

1 teaspoon garlic powder

1 teaspoon oregano




Method

1. literally just put it all together in a big pot on a medium heat and leave to simmer for about 30 minutes.

2. Allow to cool slightly and then purée to desired

consistency. I usually make it pretty smooth so that all the veg is nicely disguised! 3. Leave to cool and then spoon into freezer bags for separate portions and freeze!
